Peru Food is one of the country best kept secret. The peruvian food mixes fabulous and exquisite flavors from four continents and is considered one of the most varied and rich in the world.
Thanks to the pre-Incan and Inca heritage, and the Spanish, African, Chinese, Japanese and Italian immigration (mainly in the nineteenth century), peruvian food is as rich as the country own history. One of the most representative dishes is the Ceviche, wich is basically fish or mixed shrimp with lemon, onions, celery, cilantro, salt and black pepper.
The most traditional Peruvian food ingredients are chicken, fish, lamb, pork, rice and potato. Peruvians love hot food and they use a hot pepper called "aji". There are varios types of it: red, yellow, rocoto, etc.
The Chinese restaurants are called "chifas" and they serve excellent food especially if you are visiting Lima.
Peru Food, Most Traditional Dishes
Ceviche
Fish or mixed shrimp with lemon. The fish is cut into small pieces and then marinated with lemon juice during 1-2 hours. Next, it is mixed with onions, celery, cilantro, salt and hot pepper. The dish is served cold.
Aji de Gallina
Shredded chicken in a spicy, milky and cheese sauce.
Papa la Huancaina
Potatoes served with a spicy cheese sauce served cold with olives, lettuce and egg.
Lomo Saltado
Marinated steak, vegetables and fried potatoes, usually served over white rice.
Seco de Cordero
Lamb Stew seasoned with cumin, hot peppers, and coriander.
Carapulcra
Probably the oldest peruvian stew. Can be made with pork, chicken or both, dried potatoes and seasoned with cumin, hot peppers and peanuts.
Rocoto Relleno
Meat, onions, peanuts, milk and eggs, baked inside the rocoto (hot pepper), with potatoes and cheese.
Escabeche de pescado
Fish, vinegar and onions are the main ingredients of this dish. There are other varieties where it can be prepared with chicken or duck.
